Menu for our three course dinner. You can choose between two different starters, threee main courses and two desserts. The menu is valid until 14 January 2024.
STARTER
- Marinated smoked char with smoked dill hollandaise, pickled kimchi, carrot, radish, red onion and trout roe
- Roasted parsley root with yellow beet, beetroot, radish, fried asparagus, roasted pumpkin seeds and mustard cream
MAIN COURSE
- Fried venison with autumn mushrooms, Brussels sprouts, wild game sausage, mashed potatoes, Jerusalem artichoke crisps, sherry vinegar jus and browned hazelnuts
- Cod loin with browned butter velouté, fresh horseradish, pickled kohlrabi, chunky mashed potato, herbs and lemon baked mini carrots
- Spicy pea stew with caramelised pumpkin seeds, coconut cream and variations on pumpkin-roasted, pickled and puréed
DESSERT
- Crema Catalana with infused orange fillet, pomegranate and fresh berries
- Caramel cake with yuzu mousse, roasted coconut crunch and raspberry jelly
